Emu oil
Used for centuries by Australia’s aboriginal people and then by white settlers, it has more recently been used as an embrocation for muscle and joint problems.
There are many claims regarding the properties of emu oil, some endorsed by qualified professionals and others by users of the oil. Over the past 10 to 15 years research has been conducted in Australia and the USA on emu oil. The studies in Australia were in the most part funded by the Rural Industries Research and Development Corporation, a federal government funded body. The studies ranged from an assessment of the anti-inflammatory activity of emu oils to moisturizing and cosmetic properties of emu oil.

Emu oil is derived from farm bred emus raised on wholesome grain based rations supplemented with pasture. The emu is native to Australia and is protected by the Convention on International Trade in Endangered Species (CITES). The purpose of the Convention is to ensure that birds are not taken from the wild for commercial purposes, and this convention is strictly observed. Our emu oil is prepared conforming to the standard procedures and specifications adopted by the Emu Farmers Federation of Australia and complies with The Therapeutic Goods Administration (TGA) guidelines for refined emu oil. Emu oil comes from the rendered fat of the emu, which is filtered and treated. After this treatment, the oil is odourless and either a clear liquid or cloudily viscous, depending on temperature. The product is natural emu oil 99.9% pure. Emu oil is usually applied topically to the skin but can be taken orally if the preparation is in accordance with Australian and New Zealand Food Authority (ANZFA) guidelines for edible fats, oils and dietary supplements.
Emu oil is available in 100 ml and 1 litre bottles, or in 20 and 200 litre drums for wholesalers or manufacturers anywhere in the world. 100ml and 1 litre bottles can be purchased online, by contacting us directly or visiting our warehouse. Ostrich Leather
With its distinctive quill pattern and unique properties, ostrich leather is sought after by some of the worlds leading fashion houses. Its superbly scuff resistant and durable-yet as soft as a feather. Ostrich leather can be coloured to a variety of shades and finishes (see example colour swatches below). Our ostrich leather is full aniline, or dyed through. Our ostrich leather has been independently assessed and passed stringent tests for stretching, wearability and colourfastness.
An ideal ostrich hide yields 1.2 to 1.5 square metres (13 to 16 square feet) of leather. There are two parts to the leather – the quill marked section, which accounts for approximately 40% of the hide, and the delicately lined remainder. No two skins are the same. Each has a unique character and grain. Skin from the legs are used for accent. They are also used to make beautiful belts and watch bands.
Ostrich leather is used for garments, shoes, accessories like handbags, wallets, purses and belts, furniture and in the automotive industry in seats, steering and trimmings.

The skin is characterised by a raised area around the follicle. The raised areas are more numerous than those of an ostrich skin and occur over the entire skin. Scratch marks on the leather add to the appeal and uniqueness of the leather. An ideal emu hide yields around 0.6 square metres (6 to 7 square feet) of leather. Skin from the legs are used for accent. They are also used to make beautiful belts and watch bands.

Ostrich Meat
Novag’s ostrich meat is the richest, leanest and most succulent red meat imaginable- and it melts in your mouth. Only the finest fillet, steak and trim are used making it a meat that is quick and easy to prepare on a BBQ, roasted, in a pan or stir-fried. It has a low fat content, needs no trimming and has a distinctive natural sweetness when cooked to perfection. Because of its low fat content, ostrich cooks faster than other red meats. Care must be taken not to overcook it. It is best served medium rare to medium. Cooking ostrich to well done is not recommended. The flavour of ostrich meat is very delicate, so to enjoy it to the fullest there is no need to add sauces and spices. However, if preferred, you can marinate ostrich meat with your favourite sauce or marinade. Of course, our ostrich meat is processed in an accredited export abattoir, subject to strict Quality Control.

I found the ostrich to be lean and flavoursome and very easy to work with. Unlike other product, the Ostrich meat has very little fat and sinew, ultimately leaving me with a product that contains either no, or very minimal wastage. I have also found the Ostrich meat to be adaptable to a wide variety of cooking methods and a product which combines easily with a wide range of flavours. The leanness of this meat lends itself to a recipe such as Gravalax which I have created- a dish that has been received very well by the clientele of Cha Cha Char. Because of the overwhelming success of this I have decided to feature Ostrich on my restaurant menu as a regular item.

“Having first come across Ostrich in 1996 whilst working as Chef at Chevaliers Restaurant at Milton, I was excited to see Walk-About-Creek using it on their menu when I started in the kitchen. The sample that we received at Chevaliers was a rump from which 5 generous steak cuts plus some for us to try. Putting it on special we served it on roast Kiffler potatoes, beans and spinach with a red wine sauce and a rosella chutney. It sold out on the first two tables. The taste and texture of the meat was something that I did not forget, and it is with excitement today that I cook it for our customers. As a versatile meat which integrates and adds interest to our menu, I know that it will satisfy and delight our patrons. Knowing that it is low in cholesterol and having one third the fat of beef leads also to less guilt and the perfect meat to eat when being diet and health conscious.
